Just finished helping the local ballpark with their opening day.  Had 14 briskets in the smoker and they sold like hot cakes.  Hopefully it was a great success for them.

Pop is now curing 62 pounds of pork bellies.  Bacon will be ready in about 2 weeks.   

Yea thats right making my own bacon without all those nasty additives that you get in store bought bacon.  I posted a picture of it while it was still in the smoker. Go to the photo gallery to really get your mouth watering. You can almost taste the hickory smoke flavor.
